31 Days of Slow Cooker Meals: Smoked Sausage and Bean Cassoulet

A cassoulet is similar to a casserole, only it is a slow-cooked dish with meat and beans. The idea came to us from France. And I’m all about a nice filling dish with lots of protein in it. 31 Days of Slow Cooker Meals: Salisbury Steak

Salisbury Steak is one of my all-time favorite meals! I always had my mom buy it for me in those frozen dinners. (Okay, and I still get it on occasion as a frozen dinner as an adult.) I also loved it when my family would make it from scratch. Here’s a great way to make it in your slow cooker for even better flavor. You can even take advantage of sales, stock up on the beef, and make the patties ahead of time to freeze for when you’re ready to finish. I love mine on mashed potatoes, but other options are also great. Enjoy!

Ingredients for Salisbury Steak

  • 2 pounds lean ground beef
  • 1 envelope dry onion soup mix
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cans cream of chicken soup
  • 1 packet dry au jus mix
  • 3/4 cup water

How to make Salisbury Steak

  1. Combine the ground beef, onion soup mix, bread crumbs and milk in a large bow.
  2. Mix them together with your hands and form 8 patties.
  3. Heat the oil in a skillet.
  4. Roll the patties in the flour and brown them in the hot skillet.
  5. Brown both sides, then move them to the slow cooker. You can stack them as needed to get all 8 in there.
  6. Mix the remaining ingredients in a bowl and pour over the meat.
  7. Cook on low for 5 hours.
  8. Serve over rice, mashed potatoes or noodles.

Chicken is consistently one of my favorite meals. It is such a versatile meat that complements so many flavors in dishes and can be made so many ways. I love the taste of roasted chicken and love it with vegetables. This particular recipe slow roasts the chicken all day with three of my favorite vegetables for some of my favorite flavors.
