I love salsa and am always on the lookout for new recipes. I’ve come up with a few easy homemade salsa recipes to share with you today. Use these for dipping veggies and chips, serve them on tacos or main dishes. Don’t feel guilty about adding salsa, either, because it’s made of fresh, healthy ingredients and isn’t loaded in fat and calories. Consider it a relatively worry-free snack. It’s also great to serve at parties and other get-togethers, or just to keep on hand at home for snack time. In the summers, you can even grow your own fresh ingredients. Indulge in a Carrot Cake Smoothie

Breakfast smoothies are a great way to start the day. I like to mix it up with a variety of flavors, depending on my mood. I also have a tendency to get bored with the same thing day in and day out, but want to focus on healthy smoothie recipes as much as possible. The carrot cake smoothie is one that tricks you into thinking you’re enjoying a dessert, even though it is actually healthy.

Tempt your taste buds with the natural sweetness of oranges and carrots, balanced with complementary spices. Top it off with homemade coconut whipped cream for that dessert-y final touch if you want. And sometimes, to mix it up a bit, I may skip the whipped cream, and try other alternative milks for different flavors.

This smoothie recipe makes enough for two people. Plan ahead and plan to share. Or go ahead and be selfish on occasion. 🙂 Continue reading “Indulge in a Carrot Cake Smoothie”

How to Make Refried Beans

Have you been wondering how to make refried beans without being a slave to the stove? Do you want some good flavor to accentuate your favorite dishes? When my sister and I were living together, she used to make a lot of Mexican meals from scratch and she taught me a lot. I always loved her beans and eventually had her tell me how she did them. Then I made my own adaptations to fit my own palate. So here you go.

Note: To truly cook refried beans from scratch, you need to start with a bag of pinto beans and boil them on the stove for a couple of hours until they are soft. Time can range anywhere from 1 1/2 to 2 1/2 hours or more. When I have a craving for refried beans, I don’t usually feel like waiting quite that long. So I choose to use canned beans. I also like the taste of the canned beans a little bit more, but add enough of my own flavor. Continue reading “How to Make Refried Beans”
