Guinness and Bailey’s Cocktails

St. Patrick’s Day brings out the Irish in all of us, even those of us who do not have a drop of Irish in their blood. I do tend to enjoy Bailey’s Irish Cream year-round in a variety of ways. I do not often drink beer, but will grab a Guinness if one of my favorite craft brews is not on tap. I have fond memories of Irish Car Bombs at the Irish pub in my neighborhood. We just had the St. Patrick’s Day parade over the weekend and the actual holiday is coming up in a few days. So, I decided to go on a quest for more Guinness and Bailey’s cocktails, to give me something new to try. Some of these may require a spoon, but all looks amazing. Here is what I found.

Irish Car Bombs – Yes, I must kick it off with my favorite classic drink, anyway. Here is an easy recipe from Mix That Drink. These definitely pack a punch, so make sure you are not the one driving! One is likely plenty to get you happy for the evening. Two, and I know I am going down for the count. I’ve also seen this called the Dublin Drop or an Irish Slammer. You’re going to need Guinness glasses and shot glasses!

Guinness Whiskey Cream Cocktail – This one from Champagne and Coconuts creates a mixed drink with your traditional car bomb ingredients and adds some Irish cream syrup and a sprig of mint. They say you can also throw in a scoop of ice cream and turn it into an ice cream float! So grab those soda glasses!

Baby Guinness Jello ShotsSlim Pickins Kitchen has these little Jello shots that have a bottom layer of Guinness Jello and a top layer of Bailey’s Jello. I’ve never heard of using either in a Jello mixture, but I am sure they have an interesting flavor!

Baby Guinness Shot – Or if you prefer to leave out the Jello, you can layer Kahlua and Bailey’s and make these shots that look like mini glasses of Guinness from Creative Culinary.

Irish Car Bomb Jello Shots – This one from Bread Booze Bacon takes all of the ingredients of the traditional Irish Car Bomb (Guinness, Irish cream, and Irish whiskey) and turns them into a delicious Jello shot. These are definitely going on the list for a party.

Irish Car Bomb Pudding Shots – Okay, so you can’t quite shoot pudding the same way that you do a regular shot. But I imagine that much like a Jello shot, you can just use your tongue to get all of the goodness of the pudding shot. Consider using a spoon if you want, but I think it can be fun to get a little messy here and there. Guinness in the chocolate pudding, Bailey’s in the vanilla pudding, and Jameson in the chocolate sauce. It sounds fantastic. Meal Planner Pro shows us how it’s done.

Guinness Milkshake – This one is perfect for the St. Patrick’s Day holiday, an adult version of a Shamrock Shake. Lemons for Lulu starts with vanilla ice cream, and then adds Guinness, Bailey’s, and a touch of Creme de Menthe.

Irish Hot Chocolate – Now, this is one that I can see myself enjoy year-round, particularly on really cold nights. Food 52 teaches us how to make a syrup out of Guinness that becomes the chocolate base for the hot chocolate. You’ll give it an extra kick with Bailey’s and Jameson’s. I can feel the inner heat and relaxation building up. I would even consider putting coffee into it for an added jolt.

Guinness Affogato – Have you ever had affogato? It’s espresso poured over ice cream or gelato and it is absolutely fabulous. I love to indulge every once in a while over the summer. This version on Bon Appetit tops it off with Guinness and also recommends putting in a shot of Bailey’s. I cannot wait to get my hands on one of these!

Guinness Beer Float – This is another dessert-type combination that Nugget Market recommends just sticking a straw into these Guinness and Bailey’s cocktails. Pour the two over vanilla ice cream and top it off with a caramel sauce.

Guinness Double Chocolate Malted Milkshake With Bailey’s Whipped Cream – Okay, you aren’t going to get this one in a bar, either, but it would be easy to make at home. Just take all of the advice that Foodie With Family gives you about not making a giant mess in the house. (It’s rather amusing, and totally something I would have done.) You get a nice malted flavor without a strong beer taste as you use Guinness and chocolate ice cream for the milkshake and then whip up some Bailey’s whipped cream. I would personally skip the Whoppers candies as garnish, because I am not a fan, but otherwise, this sounds great.
